All knives on this website are original and manufactured by CCK (Chan Chi Kee) In Hong Kong.
These are NOT:
– knock-offs made in mainland China.
– fake “old stock” “before the logo was changed”
– Knives “From the same factory as CCK”
We source all our CCK knives directly from CCK by visiting the shop in-person.
Once you use them there will be no doubt whatsoever. They’re much sharper, have a thinner blade, and a constant blade taper.
Please check our authenticity promise here.

We ship internationally. However, you will have to pay for customs.
Luckily, all our orders are packaged incredibly well, so there is no doubt they will survive the long trip.
Yes. We recommend sharpening them over a whetstone such as King 6000/1000.
If you’d like to use a knife sharpener, then the only suitable ones are Global’s “Minosharp” knife sharpeners which sharpen to an Asian blade angle.
Western knife sharpeners are incompatible.

These knives are incredibly difficult to source, as they are only sold in-person in one of two shops in the world. For this reason, at one time, a lot of our knives may be out of stock.
Please subscribe to the notifications, this helps us gauge interest.
We inspect all knives before shipping and perform a paper-cutting test to check that there are no nicks.
If the knife does not meet your expectations, you can send it back and we will refund it within 14 days. If the item has been used and is presenting new stains or nicks, your refund might be partial or might be rejected.
Originally, the CCK (Chan Chi Kee) knives have been branded with the name, address, and phone number of the shop. As they business in incredibly old, they have a short phone number, recognised as prestigious in Hong Kong.
However, in Mainland China, people are not able to find details about the shop from the phone number, given Chinese phone numbers are generally much longer and use a different country code. It’s also not common in Mainland China to call a business, one would generally get in touch first over WeChat. Over the years, many Mainland Chinese companies have produced low-quality unauthorised knock-offs of the CCK knives.
Due to some trademark issues, CCK found it more difficult to sell the original knives in China than the counterfeit one. For this reason, in 2019 they changed to a laser-marked QR code and shop name. While certainly this undermines the traditional charm a bit, it’s also a mark of the history of modern China and their evolving relationship with Hong Kong.
Shipping generally takes 24h and we ship 80% of our orders within 24h. However, we are a small family-run shop so delays are not uncommon.
Well, we have Chinese Cleavers for just about everything!
Our most popular knives are razor-thin slicers, such as the KF1302 and should be kept away from hard materials such as glass cutting boards or bones.
If you’d like to chop-cut bones, we have options for both poultry and poultry and pork
Slicers are Razor-thin multi-purpose chef’s knives that prioritise quickly slicing through vegetables or meat without bones or a gentle chopping motion.
Choppers are heavier duty, and depending on the blade profile, may be suitable for poultry bones or not. Some Choppers are great a slicing too, but not as precise as Slicers.
A Bone Chopper is even thicker and has a different blade profile, with a lot more metal supporting the cutting angle, and is used to prepare meat with bones. It’s not ideal for vegetables, as can “split” harder vegetables.
YES!!!!
You should use a wooden or plastic (Polyethene) chopping board.
You should NOT use a bamboo chopping board, as it will dull your knives too quickly.
Glass is not an appropriate material for a chopping board either.
If you want further advice for a chopping board, just write us at info@chinesecleavers.co.uk
We can provide a invoice on request, please leave a note in your order if you’d like it.
We are not a VAT-registered business.
Unfortunately, due to the Offensive Weapons Act 2019, we must require age verification during delivery and sell only to 18 and above.
The courier, likely Royal Mail, will adopt a challenge-25 approach: if you’re lucky enough to look under 25, your ID will be required.
