The Long Slicer is the same Laser-thin stainless slicer profile as our standard Slicer — pressed thinner, longer, narrower, and with a flat-fronted tip — built for one specific job: long, single-pass slices through soft material. Same blade-grade steel, same edge geometry, same flat-on-the-board geometry, just a longer cutting line. Two traditional Chinese uses share this shape: the Duck Slicer (片鸭刀) for portioning Cantonese roast meats, and the Melon Slicer (西瓜刀) for splitting watermelons and large gourds.
The 7″ and 8″ sizes are the Duck Slicer — 18–21cm long, 5–6.5cm tall. They handle roast duck, char siu, ham, turkey, beef joints, and pretty much any other roast you carve at a Cantonese restaurant or a Western Sunday lunch. A Western carving knife has a curved belly that drags through crispy skin and leaves you sawing back and forth; the completely flat blade glides in a single pass and gives clean, even slices. The flat side also doubles as a serving spatula — slice, lift, plate, in one motion. The 12″ and 13″ sizes are the Melon Slicer — 30–34cm long, 6cm tall. Long enough to halve a whole watermelon in a single push without sawing, but the same Laser blade profile, so it’s just as happy slicing roast joints, brisket, smoked salmon, or anything else where you want long, clean strokes.
This is a slicer only — Laser blade profile, no bone work. For bone-in cuts use a Bone Cleaver. For everyday prep where you need a tall blade for chopping vegetables, use the standard Slicer. Stainless steel blade only — corrosion-resistant and easy to keep sharp. Choose the rustic mulberry wood handle for the traditional look and grip even with wet hands, or the stainless steel handle for the fully dishwasher-friendly option. The XL stainless-steel-handle option (KF2108X) is slightly taller and only available in the SS handle build.

Which size? The 8″ is the all-rounder for carving roasts at home. 12″ for halving melons or carving whole shoulder/leg of pork. 13″ for the largest jobs and longest single-pass cuts.
