The 片刀 (piàn dāo) — “slicing knife” — is the workhorse of professional Chinese kitchens. The professional-grade big sister of the Slicer: a taller, heavier blade built for restaurant lines that slice and prep all day long. Same Laser-thin profile as the standard Slicer, just scaled up — more height (11.5–12.5 cm vs 9–10 cm) for extra knuckle clearance and a bigger flat surface for scooping and food transfer, and a longer edge for working through volume.
If you’re coming from a Western kitchen, the Restaurant Slicer replaces a large chef’s knife or gyuto for vegetable and boneless-meat work. The flat blade gives you knuckle clearance a chef’s knife can’t match, and the broad flat side doubles as a bench scraper for moving prep off the board. Where a chef’s knife relies on a curved belly for rocking cuts, the Slicer uses its weight and height for straight-down chopping and push-cutting — the entire edge contacts the board at once.
Strictly a vegetable and boneless-meat knife. The Laser-thin blade is ground for slicing and is too fine for any bone work. For poultry bones, look at the Restaurant All-Purpose Cleaver. For pork or beef bones, the Bone Cleaver range.
Choose carbon steel for the sharpest edge and easiest re-sharpening — needs drying after use and occasional oiling (see our carbon steel care guide). Choose stainless steel for the low-maintenance option: corrosion-resistant and dishwasher-friendly when paired with the stainless steel handle. The rustic mulberry wood handle offers great grip even with wet hands; the stainless steel handle is fully dishwasher-friendly.
