The tall blade of the Chinese Cleaver allows it to be safely guided with the knuckles of your free hand when ‘tap chopping’, ‘push cutting’, or ‘pull cutting’. Therefore, large fruit and vegetables, such as cabbages, can be cut easily and safely. The heel corner of the Cleaver can be used to remove blemishes from fruit and vegetables. This stunning Chinese Cleaver is handmade by CCK (Chan Chi Kee) in Hong Kong by expert craftsmen with only the highest knife-grade steel. This Chinese cleaver has an extremely thin and sharp blade profile, perfect for slicing vegetables and meat without bones.
This is called a “Small Slicer” by CCK, however, it’s everything but small!

Just wanted to say that the knife is great – really light and sharp and feels very natural in the hand. As far as I am aware, this is the only place that you can buy CCK knives in the UK (at least online) and I am so glad I found this website. Also, I couldn’t rate the customer service more highly. Received the knife really quickly and David has given me so much information on sharpening and answered my numerous questions! Highly recommended if you are looking for a Chinese cleaver.
