The Dim Sum Knife (拍皮刀, pāi pí dāo) is a specialist pastry tool, not a kitchen slicer. The blade is cut from sheet stock, not forged like our Slicer or All-Purpose Cleaver — it has nowhere near the edge geometry, hardness, or longevity of a forged knife. In fact, it doesn’t have a sharpened edge. What it does have is a wide, flat, perfectly clean blade face, which is exactly what its job needs.
In a dim sum kitchen this is the tool used to make dumpling wrappers. A small ball of dough is dropped on the bench, the flat side of the blade is pressed and dragged across it to flatten it into a thin, round disc, and the same blade then trims the wrapper to size. Press, smear, lift, repeat — hundreds of wrappers an hour. It’s the Chinese equivalent of a Western dough scraper or pastry spatula, except way more fun!
It is only suitable for soft pastry and dough work. Don’t use it on vegetables, raw meat, bones, or anything dense — the cut blade will dull or roll the edge almost immediately. For everyday slicing and chopping use the standard Slicer (forged, properly hardened, lifelong tool). The Dim Sum Knife is here because nothing else has quite the right blade face for working soft dough, and at this price it makes sense to keep one in the drawer if you make dumplings, har gow, or soft buns at home.
